Eggplant with tomato and garlic sauce





Step #1: Thoroughly wash the eggplants and partly remove the skin by peeling them to look like stripes. Fry with the potatoes in sunflower oil and drain on a kitchen towel once cooked.


Step #2: In a separate pan, fry the onions and garlic until transparent. Add green peppers, tomatoes, bouquet garni (the 3 sprigs of parsley, the sprig of thyme, and the small bay leaf), tomato paste, pepper paste, allspice and salt, along with 1 cup of water. Bring to a boil on low heat.


Step #3: When the tomatoes change color (after about 5 minutes of cooking), remove the bouquet garni, and pour half of the sauce into a baking dish. Make a cut lengthwise in the center of the eggplants and insert garlic clove in each.


Step #4: Place the eggplants and potatoes on top of the tomato sauce in the baking dish and top off with the remainder of the sauce. Cook for 30 minutes in a preheated 350º F oven. Serve warm and garnish with spring onion.

Diane - s tapenade





This is such a simple recipe to put together. And that basically that is all you do. Just assemble your ingredients first then blend and chill. It’ s likely that you have all the ingredients at home most of the time. Check your pantry shelf and bring in the ingredients you don’t already have. You will always have this wonderful tapenade at your fingertips. It is elegant and delicious.


Putting dips and sauces in attractive serving dishes really really can set the mood you are trying to create I think plain white serving pieces for the hors d’oeuvres or appetizers are great. It is all in how attractive you choose to make it look. Try low sided bowls when you can so guests can more easily see what you have offered. Make designs with veggies on a plate, straighten all the crackers in holder or plate ( nicely arranged). Always provide a spreader if needed. And napkins and small plates. All these things you can easily have in your pantry. Try to use real plates, instead of plastic or paper. Well Di, I think you can guess , this a GREAT recipe in my book Here goes…..



  • 1/2 small onion

  • 4 oz. can chopped black olives

  • 2 oz. can anchovies

  • 3 Tablespons Capers

  • 1 Tablespoon chopped garlic

  • 2 Tablespoons Fresh lemon juice

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon Black pepper



  1. Put all ingredients in (except the olive oil mixture) blender.



Drain oil off anchovies and add enough live oil to make 1/3 cup and pour through hole in processor lid whie blending.


Chill and serve with white corn chips, or any cracker, bread piece and so on and so on. Pretty much this delicious recipe is very versatile. You will make it time and time again. Thanks Di.

Dessert recipes christmas fruit cake





Dessert Recipes for Christmas Fruit Cake – Who does not want a cake for Christmas ? Everyone does want a cake and specially that tastes wonderful… Christmas Fruit Cake Recipe sure will make you mouth watering…


Preparation time: 25 minutes
Cooking: 35 minutes
Serves: 5


Ingredients:


– 8inch/20cm Chirstmas fruit cake
– 1-2 tbls apricot jam, sieved and warmed
– 8oz/225g marzipan sugar like caster, for sprinkling


Icing and decoration:


– ½ basic quantity Royal Icing
– 3 sugar bells
– 2 holly leaves
– 1 cake candle
– 22cm colored ribbon


Method:


Bake the mixture in a greased and lined deep 8in/20cm round cake tin in the oven preheated to 300f/150c/Gas 2 for 1¾ hours, and leave it to cook down.


Brush the top of the cake with jam. Roll out the marzipan on a sugared surface to an 8½in/21cm round. Invert the cake on the marzipan.Using a small palette knife, smooth the edges of the marzipan against the sides of the cake.


Place the cake, right way up, on a cake board and leave the marzipan to dry for 2-3 days.


Swirl the icing over the top of the cake Decorate with the bells, holly and candle and leave to set. When ready to serve, tie a ribbon around the side of the cake. Make 10 to 12 slices to serve 5 person.

Deep chocolate cheesecake





Directions


Step #1: Grease an 8-inch springform cake pan.


Step #2: To make the base, put the crushed graham crackers, sugar, cocoa powder, and melted butter into a large bowl and mix well. Press the mixture evenly over the base of the prepared pan.


Step #3: Put the mascarpone and sugar into a bowl and stir in the orange juice and rind. Add the melted chocolate and brandy, and mix together until thoroughly combined. Spread the chocolate mixture evenly over the crumb layer. Cover with plastic wrap and chill for at least 4 hours.


Step #4: Remove the cheesecake from the refrigerator, turn out on a serving platter and decorate as desired. Serve immediately.

Chicken recipes - cream of chicken soup

Ingredients:


25 g (1oz/6 teaspoons) butter
1 small leek,washed and diced
45 g (1½ oz/¼ cup, plus 6 teaspoons) plain flour
850 ml (30 fl oz/3¾ cups) chicken stock
150 ml (5 fl) dry white wine
2 teaspoons chopped fresh chives
150 ml (5 fl) thick sour cream and croutons, to serve


Process:


In a saucepan, melt the butter and gently sauté the leek until soft. Stir in the flour and cook over a low heat for 1-2 minute.


Remove the pan from the heat and slowly add the stock,a little at a time, stirring well. Return to the heat and bring to the boil, stirring until thickened.


Add the wine, cover and simmer gently for 15 minutes; add the chicken and nutmeg and simmer for a further 5 minutes. Pour in the cream and heat gently without boiling, then stir in the chopped chives. Serve in warmed bowls with spoonfuls of thick sour cream and croutons

Chicken casserole with a twist recipe

This recipe started out as a chicken wreath for the holidays. I have adjusted it and made it my own. Every time I make this recipe, it is always a big hit. There are usually leftovers that are great for lunch the next day.


Ingredients


* 3-4 boneless skinless chicken breasts, cooked, or 2-10 oz. cans of chicken, drained
* 1 1/2 C. Colby and Monterey Jack Cheese
* 1 can cream of chicken soup
* 1/2 onion, chopped
* 1 bell pepper, chopped
* 1 C. broccoli
* 1 box pie crust, in the refrigerator section, 2 in the pack
* salt and pepper to taste


Directions


Preheat oven to 425 degrees. Lightly grease a 9×13 inch casserole dish. Place one of the pie crusts in the bottom of the casserole dish. You may need to work with the pie crust to make it fit. Mix all ingredients in a large bowl and pour into the casserole dish. Use the other pie crust to top the mixture; make sure it reaches all the way to the ends of the casserole dish. Bake for 35-40 mintues or until the top is brown. ENJOY!

Chicken and macaroni casserole





Cheesy Chicken Mac Casserole Recipe

This is a wonderful dish that my whole family enjoyed!


Ingredients


2 C. uncooked elbow macaroni
2 5 oz. cans chunk chicken (I use all white meat)
2 C. sheredded cheddar cheese
2 C. milk
2 cans cream of chicken soup
1 4 oz. can mushrooms
1/4 C. chopped onion


Directions


Preheat oven to 350 degrees. In a large bowl combine the macaroni, chicken, cheese, milk, soup, mushrooms and onion. Mix together and put into 9×13 baking dish. Bake at 350 degrees for about 45 minutes or until bubbly and golden brown.

6-8

This is an easy dinner to throw together, especially if you have leftover chicken or turkey in the fridge.


Ingredients


1 1/2 C. macaroni, uncooked
1 C. cheddar cheese, shredded
1 1/2 C. chicken or turkey, cooked
4 oz. mushrooms, drained
1 C. cream of mushroom soup
1 C. milk
1/2 tsp. salt
1/2 tsp. curry powder
1 C. frozen peas


Directions


Heat oven to 350 degrees. Stir together all ingredients; pour into ungreased 1 1/2 qt. casserole dish. Cover; bake 1 hour.

Cheesy chicken bake recipe

A tasty dinner that’s finished in just 30 minutes.


Ingredients


* one 10 3/4-oz. can condensed cream of chicken soup
* one 8-oz. jar processed cheese spread
* 1/2 C. milk
* 2 C. diced, cooked chicken
* 3 Tbs. chopped green chilies
* 2 tsp. instant minced onion
* 4 C. coarsely crushed taco shells


Directions


In a saucepan, heat together soup and cheese spread until blended. Gradually stir in milk; add chicken, chilies, and onion. Cook and stir until mixture bubbles. Place half of the crushed taco shells in 1 1/2-quart casserole. Pour in soup mixture and top with remaining shells. Bake in 350 degree oven for 20 minutes. Let stand 5 minutes before serving.

Broccoli, cheese - rice casserole recipe

The perfect combination of ingredients makes for a vegetarian meal or a filling side.


Ingredients


2 C. Minute Rice (uncooked)
1 Can Cream of Mushroom Soup
1 Lb. Velveeta Cheese
2 Package Frozen chopped broccoli
1/4 C. Butter
couple shakes of garlic powder and onion powder


Directions


Cook rice per instructions on box. Combine soup, Velveeta and butter in saucepan. Cook until blended. Mix together broccoli, rice ,sauce and couple shakes of garlic powder and onion powder . Pour into buttered casserole dish and bake in moderate oven (375
